Desperately Seeking Chewy






It’s raining in Wiltshire today so no healthy walks to the pub.  Instead I did some baking.

When I was in Australia I baked a vegan version of my healthy rock cakes but they came out quite flat and chewy. However, Paul was very keen on this hybrid cookie.  Since we’ve been back in England I have tried to reproduce them but failed miserably to get the same chewy texture.  

This morning I experimented with a completely different recipe that promised a chewy, fruit and nut slice.  The recipe called for dried cranberries; I didn’t have any so I used a couple of spoonfuls of cranberry sauce left over from the turkey and some dried cake fruit (it’s called improvisation).

We tried a slice each with our afternoon cup of tea. 
 


Paul's verdict:  "A nice piece of cake but it's not a chewy bar..."  The search continues.

  1. I love nuts, but don't particularly like them in cakes. Lady M recently made an apple-n-walnut cake, which I didn't eat too much of, then yesterday she made a lemon drizzle cake which is already half eaten. As you say, the search for the perfect cake continues.

  3. I've just watched a cooking prog. with Nigel Slater. Using up leftovers (never in our house) and glut of toms or courgettes and then he just finds an avocardo or some smoked haddock to add in what should be 'storecupboard' ingredients. Thought of you as I have a packet of dried cranberries that must be getting past their best.

  4. Our ANZAC biscuits are a bit like that - either chewy or crisp and crunchy. I actually like them chewy too and I think it might be a bit of inaccuracy in measuring the butter content of the recipe that does it. Perhaps a bit more butter in the recipe might achieve the result you are looking for ??

    1. I adore ANZAC biscuits! Not sure if their high butter content is good for me though.
